We hand rub each side of our Country Bacon with a cure of salt, pepper, and brown sugar. After a few weeks of curing and aging, the sides are smoked whole for at least 48 hours in our smokehouse out back, which is fed by a wood stove full of hickory logs. These simple and time honored practices result in an extremely flavorful smokey bacon that's as enjoyable by itself, slice by slice, as it is on a sandwich or added to one of your favorite recipes. Our Hickory Smoked Country Bacon comes thick sliced in one pound packs. Each order contains four one pound packs.

Someone gave us two packages at a primitive rendezvous in Florida. I fried it up and nine of us had it for breakfast over the open fire. I have eaten bacon for 60 years, this is the best I have ever had and the eight others agree. You will get an order or two from Maine.

For anyone on a Paleo diet nitrate free is a MUST!  This bacon fits the bill. It has a soft hickory smoke flavor that enriches any dish you use it in, and not too salty. Cook it low and slow and you will never be disappointed!

Bacon for the sophisticated palette May 30, 2017

This bacon is similar to good European hams in that it depends on good quality pork, minimal ingredients, and time to develop its flavor. There are some fancy bacons around here that depend on a whole range of spices for their flavor, which in my opinion is often used more as a mask to cover poor quality than as a flavor enhancer.  This bacon doesn't do that - it stands on its own merits.  I love the complex flavor developed from the long curing process, and that the fact that it is dry cured, instead of brine-injected, cuts way, way down on the shrinkage during cooking.  
When we got our first delivery, I baked four pieces in the oven for my wife's and my breakfast. We tasted them... then baked the rest of the package and had BLT's for lunch using some good tomatoes I'd grown out in the garden. I can't wait to try the ham.

Great Bacon when used right. February 3, 2017

Bacon, like most meats is versatile. You chop bacon up to put into recipes, you top sandwhiches with it, and sometimes you just have a few slices with your breakfast.

If you are using this bacon as a side item with breakfast you will see polarizing results. This bacon is intense. And can be a little hard to take solo if you aren't prepared. Some of my family didn't like it all by itself. I could understand this.

But on sandwiches or in recipes it is INSANELY good. In some recipes you want the bacon to stand out. This can be difficult when it competes with many other ingredients. Sure you could add more bacon, or you can just add Benton's Bacon. This bacon cuts through all flavors to let the diner know it's there.

So for breakfasts I'll use a flavorful but less intense bacon, but this is my favorite bacon to cook with.
